Grilled Fillets Caesar Potato Salad
(Serves 4 to 6)
1 package Fisher Boy® Daily Catch™ Citrus Herb Fillets
1½ lbs. baby red potatoes, halved or quartered
1/3 cup chopped red pepper
2 green onions, chopped
1/3 cup regular or light bottled Caesar dressing
1/4 cup grated Parmesan cheese
Cook fish according to package directions; cut into bite-sized pieces.
Cook potatoes in boiling salted water until tender, about 10 minutes; drain.
Place potatoes in large bowl and toss with hot fish pieces and sauce.
Cool slightly for about 15 minutes.
Toss potato mixture with remaining ingredients and chill.
