Lemon Pepper Fish with Fruit Salsa
(Serves 4)

Salsa
2 packages Fisher Boy® Daily Catch™ Lemon Pepper Fillets (4 fillets)
1 cup finely diced ripe mango
1/2 red pepper, diced
1/4 cup chopped red onion
2 Tbsp. fresh lime juice
1 tsp. sugar
1/4 cup chopped fresh coriander or parsley
Dash hot sauce (or to taste)

  • Prepare fish according to package directions.
  • In bowl, combine salsa ingredients; toss to coat.
  • Serve fillets with salsa.

Shopping Tip:
Look for mangoes with reddish-yellow skin that is fairly firm with gentle pressure. Some mangoes turn yellow all over when ripe. Avoid very soft, bruised or green fruit.
