3 cups frozen Italian-blend vegetables
4 Captain’s Classics™ Roasted Garlic and Herb Tilapia Fillets
2 lemons
4 tsp. white wine, divided
Place vegetables in microwave-safe bowl with 1/4 cup water. Microwave on HIGH until thawed, about 2 to 2¼ minutes, stirring once. Drain.
Cut 8 12-inch pieces of foil and lay 4 pieces on work surface. Cover each piece of foil with a second layer of foil. Place 1 frozen tilapia fillet on each; evenly mound vegetables on top of fish.
Cut 8 1/4-inch-thick slices of lemon and lay 2 slices on top of each batch of vegetables. Drizzle 1 tsp. white wine over each.
For each foil packet, bring opposite ends of foil together and fold down until just touching vegetables. Fold in each end. Bake at 425° 18 to 20 minutes. Let stand 2 minutes, then carefully open packet, avoiding any steam and transfer, with sauce, to serving plates.
