Roasted Garlic and Herb Fillet Sandwich with Balsamic Glazed Onions
(Serves 4)

4 Captain’s Classics™ Roasted Garlic and Herb Tilapia Fillets
1 Tbsp. butter
1 Tbsp. olive oil
2 large yellow onions, thinly sliced
1 Tbsp. sugar
1 Tbsp. balsamic vinegar
1/4 tsp. salt
1/4 tsp. pepper
4 rustic Italian-style rolls, split
Lettuce leaves and tomato slices (optional)

  • Prepare fish according to package directions.
  • In large skillet over medium heat, melt butter in oil. Add onions and cook, stirring occasionally, until just starting to turn golden, about 8 minutes.
  • Sprinkle with sugar and vinegar. Continue cooking and stirring occasionally, until deep golden, about 8 minutes.
  • Add salt and pepper.
  • On each roll, place lettuce, tomato, onions and 1 fillet. Serve warm.
