Roasted Garlic and Herb Fillet Sandwich with Balsamic Glazed Onions
(Serves 4)
4 Captain’s Classics™ Roasted Garlic and Herb Tilapia Fillets
1 Tbsp. butter
1 Tbsp. olive oil
2 large yellow onions, thinly sliced
1 Tbsp. sugar
1 Tbsp. balsamic vinegar
1/4 tsp. salt
1/4 tsp. pepper
4 rustic Italian-style rolls, split
Lettuce leaves and tomato slices (optional)
Prepare fish according to package directions.
In large skillet over medium heat, melt butter in oil. Add onions and cook, stirring occasionally, until just starting to turn golden, about 8 minutes.
Sprinkle with sugar and vinegar. Continue cooking and stirring occasionally, until deep golden, about 8 minutes.
Add salt and pepper.
On each roll, place lettuce, tomato, onions and 1 fillet. Serve warm.
