Sesame Noodle Salad with Tilapia
(Serves 4)

3 Captain’s Classics™ Roasted Garlic & Herb Tilapia Fillets
4 oz. rice vermicelli noodles
1 cup cucumber, chopped and seeded
2 green onions, chopped
1/2 red pepper, cut into thin strips
1/4 cup chopped fresh coriander OR parsley

Dressing
1/4 cup rice vinegar
1 Tbsp. sesame oil
1 Tbsp. vegetable oil
1 Tbsp. soy sauce
1 Tbsp. toasted sesame seeds
2 tsp. sugar
2 tsp. minced ginger root
1 clove garlic, minced
1/2 tsp. hot sauce

  • Cook fish according to package directions; set aside.
  • Break noodles once or twice and cook according to package directions.
  • Drain noodles and chill under cold running water; drain again and place in bowl.
  • Add cucumber, onions and red pepper to noodles.
  • Whisk together dressing ingredients and toss with noodle mixture.
  • Cut fish into chunks and toss with noodle mixture.
  • Cover and chill for up to 4 hours.
  • Sprinkle with coriander or parsley and toss before serving.
