Southern Style Fillets with Broccoli and Roasted Pepper Salad
(Serves 4)

8 Fisher Boy® Southern Style Fish Fillets, any flavor
6 cups broccoli florets (about 1 large bunch)
3/4 cup roasted red pepper strips, fresh or prepared (1 red pepper)
1/2 cup crumbled feta cheese
2 Tbsp. olive oil
1 Tbsp. balsamic vinegar
1/2 tsp. dried oregano
1 clove garlic, minced
1/4 tsp. salt
1/4 tsp. pepper
1 Tbsp. toasted pine nuts or slivered almonds

  • Prepare fish according to package instructions.
  • Meanwhile, cook broccoli in boiling water until tender-crisp, about 3 minutes. Rinse with cold water and drain. Combine with red pepper strips and feta.
  • In small bowl, combine olive oil, vinegar, oregano, garlic and seasoning. Toss with broccoli salad.
  • Sprinkle with nuts just before serving with fillets.
