Southern Style Fillets with Broccoli and Roasted Pepper Salad
(Serves 4)
8 Fisher Boy® Southern Style Fish Fillets, any flavor
6 cups broccoli florets (about 1 large bunch)
3/4 cup roasted red pepper strips, fresh or prepared (1 red pepper)
1/2 cup crumbled feta cheese
2 Tbsp. olive oil
1 Tbsp. balsamic vinegar
1/2 tsp. dried oregano
1 clove garlic, minced
1/4 tsp. salt
1/4 tsp. pepper
1 Tbsp. toasted pine nuts or slivered almonds
Prepare fish according to package instructions.
Meanwhile, cook broccoli in boiling water until tender-crisp, about 3 minutes. Rinse with cold water and drain. Combine with red pepper strips and feta.
In small bowl, combine olive oil, vinegar, oregano, garlic and seasoning. Toss with broccoli salad.
Sprinkle with nuts just before serving with fillets.
