Spicy Pepper-Crusted Tilapia
(Serves 1)

1 package Solo Selects™ Tilapia in Roasted Shallot Butter
1½ Tbsp. olive oil
1 tsp. chopped garlic
1 Tbsp. chopped shallots
1/2 cup finely diced red and yellow peppers
1 tsp. chopped pepperoncini
1/2 tsp. crushed red pepper flakes
1/2 tsp. dried thyme
1/2 cup Italian-style (with roasted garlic) instant stuffing mix
1 tsp. water

  • Prepare fish in microwave according to package directions.
  • In small skillet, heat oil over medium heat. Add garlic, shallots, peppers, pepperoncini, and red pepper flakes. Cook until softened, about 3 minutes. Remove from heat.
  • Stir in thyme, stuffing mix, and 1 tsp. water, breaking up any large stuffing chunks with tip of spoon. Let stand until moisture is absorbed, 1 to 2 minutes.
  • Remove fully cooked fish from microwave; let stand 2 minutes. Place on serving plate, surrounded by any excess sauce. Spoon crumb mixture on top of fish and press gently to adhere. Return to microwave and cook on HIGH, 30 to 45 seconds.
