(Serves 4)
1 onion, chopped
2 cups sliced mushrooms
1/2 red pepper, chopped
2 Tbsp. butter
2 Tbsp. flour
1 tsp. salt
1/2 tsp. black pepper
4 cups milk
2 cups elbow macaroni
3 Captain’s Classics™ Roasted Garlic & Herb Tilapia Fillets, thawed
1/2 cup prepared pesto
1/2 cup grated Parmesan cheese
- Note: Stir ingredients continuously throughout the first four steps.
- In deep skillet, cook onion, mushrooms and red pepper in butter over medium-high heat, stirring for 5 minutes or until softened.
- Sprinkle in flour, salt, and pepper; cook for 1 minute.
- Add milk and bring to a boil.
- Add elbows; reduce heat and simmer covered for 10 minutes, stirring occasionally, or until elbows are almost tender.
- Cut tilapia fillets into bite-sized pieces and add to elbows.
- Cook uncovered for 5 minutes or until tilapia flakes easily with a fork.
- Stir in pesto and sprinkle with Parmesan cheese.
- Remove from heat and let stand 5 minutes before serving.
